Roasted Sweet Potatoes with Feta
A recipe for roasted sweet potatoes with feta cheese. These sweet potatoes are a delicious and easy side dish, perfect for a weeknight meal or a weekend gathering. Seasoned with herbs and spices, then topped with salty feta, a drizzle of honey, and a squeeze of lemon, they offer a wonderful balance of sweet and savory flavors.

Ingredients
- 3mediumsweet potatoes
- 100gfeta cheese
- 1lemon
- 1tablespoon honey
- 1handful parsley
- 1olive oil
- 1teaspoon salt
- 1teaspoon black pepper
- 1teaspoon thyme
- 1/2teaspoon chili flakes
Instructions
- Preheat the oven to 180 degrees Celsius. Wash the sweet potatoes under running water, and cut them in half lengthwise.
- Arrange the halved sweet potatoes cut-side up on a baking sheet lined with parchment paper. Season with salt, pepper, and thyme. Drizzle with olive oil and bake uncovered for 1 hour, or until the flesh is tender.
- Remove the sweet potatoes from the oven, sprinkle with crumbled feta cheese, drizzle with lemon juice, honey, and extra olive oil (you can also combine these ingredients in equal proportions into a sauce).
- Garnish with chili flakes and plenty of chopped parsley.
