Pork Tenderloin in Horseradish Sauce
This is a Polish dish featuring pork tenderloin in a creamy horseradish sauce. It's a flavorful and comforting meal perfect for a special occasion or a satisfying weeknight dinner.

Ingredients
- 1pork tenderloin
- 1tablespoonoil
- 1/4cupdry white wine
- 1cupwater
- 2-3tablespoonssoy sauce
- 1teaspoongrated horseradish
- 80ml30% heavy cream
- 1teaspoonpotato starch
- chives
Instructions
- Rinse and pat the pork tenderloin dry.
- Remove the white membrane from the side of the meat.
- Cut the meat into 1 cm thick slices.
- Heat a large skillet with a lid or a heavy-bottomed saucepan with oil.
- When the oil is hot, add the meat slices and fry for about 2 - 3 minutes until golden brown.
- Meanwhile, season with sea salt (not too much, as the soy sauce is salty) and pepper.
- Turn the slices over and repeat the frying.
- Pour in the wine and cook for half a minute, then add the hot water and soy sauce, cover and bring to a boil.
- Cook covered for about 25 minutes, until the meat is tender, turning the meat 1 - 2 times in the meantime.
- Towards the end, add the horseradish.
- Add the heavy cream and (through a fine-mesh sieve) potato starch, stir and bring to a boil.
- Remove from heat and serve with chopped chives.
