Baked Pasta with Chicken, Curry, and Pumpkin
Baked pasta dish featuring chicken breast, tomato sauce, and melted mozzarella cheese.

Ingredients
- 3tablespoonsolive oil
- 2clovesgarlic
- 350mltomato passata
- 1teaspoondried oregano
- 200gdry pasta, such as tubes or spirals
- 350gpeeled pumpkin
- 400gchicken breast fillet
- 1teaspoonRoman cumin
- 1teaspoonsweet paprika
- 1teaspooncurry spice
- 1teaspoongranulated garlic
- 1ballmozzarella (125 g)
- 100ggrated yellow mozzarella
Instructions
- In a saucepan, gently sauté the finely grated garlic with 1 tablespoon of olive oil. Add the tomato passata, season with salt, pepper, and oregano. Simmer for about 3 minutes.
- Bring a separate pot of water to a boil. Add the pasta and cook al dente, according to the time indicated on the package. Add the peeled and diced pumpkin 4 minutes before the end and cook together until done. Drain the mixture in a colander.
- Preheat the oven to 200 degrees Celsius.
- Heat a large frying pan, pour in 2 tablespoons of olive oil, and add the diced chicken. Season with salt and pepper and sauté, stirring occasionally, for about 2-3 minutes. Add the spices (Roman cumin, paprika, curry, granulated garlic) and cook for another 1-2 minutes.
- Spread 3 tablespoons of tomato sauce on the bottom of a baking dish. Layer half of the pasta with pumpkin, half of the chicken, and spread half of the remaining tomato sauce. Sprinkle with half of the shredded white mozzarella and half of the grated yellow mozzarella.
- Layer the remaining pasta with pumpkin, the remaining chicken, the remaining tomato sauce, and the remaining mozzarella (yellow and white).
- Bake in the oven for about 20 minutes.
