Teriyaki Chicken with Noodles and Crispy Vegetables

This dish is the essence of quick and flavorful wok frying. Pieces of chicken are browned to a golden color with bell peppers, onions, and garlic, then drizzled with a sweet and savory teriyaki sauce with a touch of soy sauce, served with noodles cooked al dente.

Teriyaki Chicken with Noodles and Crispy Vegetables

Ingredients

  • 500gchicken breast fillet
  • 250gnoodles
  • 1piecered bell pepper
  • 1pieceyellow bell pepper
  • 1piecelarge onion
  • 4clovesgarlic
  • 3tablespoonsvegetable oil
  • 4tablespoonsteriyaki sauce
  • 2tablespoonssoy sauce
  • 1teaspoonfreshly grated ginger
  • 1teaspoonsesame seeds
  • 2tablespoonsfreshly chopped cilantro
  • salt, to taste
  • black pepper, to taste

Instructions

  1. Prepare the ingredients: Cut the chicken breast into cubes or strips. Remove the seeds from the bell peppers and cut them into strips. Slice the onion into rings. Finely chop the garlic.
  2. Cook the noodles: Bring a large pot of salted water to a boil. Add the noodles and cook al dente, according to package instructions. Drain and set aside.
  3. Fry the chicken: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium heat. Add the chicken pieces and cook, stirring, until golden brown and cooked through on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. Fry the vegetables: Add the remaining 1 tablespoon of oil to the same skillet. Add the onion and bell peppers. Cook for 3-5 minutes, or until the vegetables are softened but still crispy. Add the chopped garlic and grated ginger (if using) and cook for another minute, until the garlic is fragrant.
  5. Combine ingredients and sauce: Reduce the heat. Return the cooked chicken to the skillet with the vegetables. Pour in the teriyaki sauce and soy sauce. Stir well to coat all ingredients with the sauce. Cook for 2-3 minutes, or until the sauce has thickened slightly and coats the chicken and vegetables.
  6. Serving: Add the cooked noodles to the skillet with the chicken and vegetables. Stir well to absorb the sauce. Season with salt and pepper to taste. Serve immediately, garnished with sesame seeds and fresh cilantro, if desired.
