Tare Sauce

A Japanese tare sauce based on soy sauce with the addition of kombu seaweed, shiitake mushrooms, and bonito flakes.

Tare Sauce

Ingredients

  • 500mlJapanese soy sauce (e.g., Kikkoman, Yamasa)
  • 60mlmirin
  • 60mlsake
  • 2piecesshiitake mushrooms
  • 20gramsdried kombu seaweed
  • 20gramskatsuobushi bonito flakes

Instructions

  1. Pour 500ml of soy sauce into a jar.
  2. Add kombu seaweed.
  3. Add mirin.
  4. Add sake.
  5. Add shiitake mushrooms.
  6. Seal the jar and refrigerate overnight.
  7. The next day, transfer the contents of the jar to a saucepan and heat for 10-15 minutes to approximately 80°C.
  8. Remove the kombu seaweed and mushrooms; add katsuobushi bonito flakes.
  9. Heat for another 10-15 minutes to approximately 80°C.
  10. Strain and transfer to a clean jar.
