Tare Sauce
A Japanese tare sauce based on soy sauce with the addition of kombu seaweed, shiitake mushrooms, and bonito flakes.

Ingredients
- 500mlJapanese soy sauce (e.g., Kikkoman, Yamasa)
- 60mlmirin
- 60mlsake
- 2piecesshiitake mushrooms
- 20gramsdried kombu seaweed
- 20gramskatsuobushi bonito flakes
Instructions
- Pour 500ml of soy sauce into a jar.
- Add kombu seaweed.
- Add mirin.
- Add sake.
- Add shiitake mushrooms.
- Seal the jar and refrigerate overnight.
- The next day, transfer the contents of the jar to a saucepan and heat for 10-15 minutes to approximately 80°C.
- Remove the kombu seaweed and mushrooms; add katsuobushi bonito flakes.
- Heat for another 10-15 minutes to approximately 80°C.
- Strain and transfer to a clean jar.
