Pork Tenderloin in Paprika Sauce
This is a classic Polish dish featuring tender pork tenderloin simmered in a rich and flavorful paprika sauce. The sauce is made with onions, beef broth, Worcestershire sauce, paprika, and a touch of tomato concentrate. Ingredients
- 1pork tenderloin (450 g)
- 2tablespoonsolive oil
- 1onion
- 250mlhot broth or stock
- 1tablespoonWorcestershire sauce
- 1.5teaspoonssweet paprika
- a pinchhot paprika
- 1tablespoonchopped fresh parsley
- 1teaspoontomato concentrate
- 1tablespoonbutter
- 1teaspoonflour
Instructions
- Cut the pork tenderloin into 1.5 cm thick slices, season with freshly ground black pepper.
- Pour 1 tablespoon of olive oil into a skillet and add the onion, sliced into half-moons. Sauté, stirring occasionally, for about 5 minutes. Set aside.
- Pour the remaining 1 tablespoon of olive oil into the same skillet and spread it evenly. Add the meat and fry for about 2 minutes per side, seasoning with salt in the meantime.
- Add the onion, then pour in the hot broth and add the sweet and hot paprika. Cover and cook for about 25 minutes, or until the meat is tender, turning the meat 1-2 times in the meantime. Add the tomato concentrate towards the end.
- Heat the butter in a separate skillet over medium-high heat. Add the flour and sauté for a moment, stirring constantly. Transfer to the skillet with the meat, mix well, and bring to a simmer.
