Ratatouille

Traditional Provençal vegetable dish from southern France.

Ingredients

  • 3tablespoonsolive oil
  • 2piecesonions
  • 3clovesgarlic
  • 1pieceeggplant
  • 2piecessmaller zucchini
  • 2piecesred peppers
  • 1piecebay leaf
  • 1teaspoonthyme
  • 1teaspoonrosemary
  • 0.5cupwater
  • 1cuptomato passata

Instructions

  1. Pour olive oil into a large pot with a thick bottom, add diced onion and sauté lightly, stirring frequently, for about 4 minutes.
  2. Add peeled and thinly sliced garlic and sauté for another about 2 minutes.
  3. Now gradually add the chopped vegetables, sautéing the ingredients all the time: first the diced eggplant, then the zucchini and finally the pepper.
  4. Add bay leaf, season with salt (about 1/2 teaspoon) and freshly ground pepper (1/3 teaspoon), thyme, rosemary. Finally, cover and simmer for about 2-3 minutes.
  5. Pour in hot water and tomato passata, mix and bring to a boil. Cover with a lid and cook for about 5-8 minutes, until the vegetables are tender.
