Ratatouille
Traditional Provençal vegetable dish from southern France.

Ingredients
- 3tablespoonsolive oil
- 2piecesonions
- 3clovesgarlic
- 1pieceeggplant
- 2piecessmaller zucchini
- 2piecesred peppers
- 1piecebay leaf
- 1teaspoonthyme
- 1teaspoonrosemary
- 0.5cupwater
- 1cuptomato passata
Instructions
- Pour olive oil into a large pot with a thick bottom, add diced onion and sauté lightly, stirring frequently, for about 4 minutes.
- Add peeled and thinly sliced garlic and sauté for another about 2 minutes.
- Now gradually add the chopped vegetables, sautéing the ingredients all the time: first the diced eggplant, then the zucchini and finally the pepper.
- Add bay leaf, season with salt (about 1/2 teaspoon) and freshly ground pepper (1/3 teaspoon), thyme, rosemary. Finally, cover and simmer for about 2-3 minutes.
- Pour in hot water and tomato passata, mix and bring to a boil. Cover with a lid and cook for about 5-8 minutes, until the vegetables are tender.
